DETAILS - A great one day food course. This is a practical hands on introduction to Coldsmoking. including the basic theory of food smoking including both Hot and Cold smoking. How to construct and use a cold smoker and where to source your wood. We cover brining & salting salmon, curing & smoking, health & Safety including food hygiene. The course is based on practical demonstration of both curing and smoking and includes producing smoke and the principals of combustion. Throughout the day we will smoke 6 types of food and hot smoke a trout.
